Portuguese custard tarts (pastéis de nata). This delicious Portuguese egg custard tart pastry or pastéis de nata are pastries inspired by an original recipe called Pastéis de Belém, which was created before the 18th century by Catholic monks at the Jerónimos Monastery in Lisbon (parish of Saint Mary of Bethlehem). Monasteries and convents used large quantities of egg-whites for starching friars and nuns' habits and used the leftover egg yolks to make and sell cakes and pastries.
