It's been awhile since I have done any scanning, but from memory I used to scan at 600DPI which was good for A3 prints...or even a little larger. It depends on what you want to do with the scan. If you anticipate making very large prints then scan at1200DPI....but be prepared for a long scan time and a huge file size.

The simple answer is do tests to work it out.

You want to use an even fraction of scanner resolution otherwise the scanner is interpolating and for other sizes you want Photoshop to interpolate rather than the scanner. With the V750 You have 4800dpi or 6400dpi dual lens but those are theoretical resolutions and the scanner doesn't have anything like that in practice. Also, I don't have one of those scanners and I don't remember how the dual lens kicks in. So I suggest try 2400dpi, 1200dpi and 600dpi, and 3200dpi, 1600dpi and 800dpi (dual-lens).
